
All you see is not what is was in the first place. This has to be a cake with banana espresso layers and white/dark chocolate filing but hey, plans are to be broken. All of a sudden coconut, oats and nuts where jumping into the bowl and i had no choice – cookies are on the way.
So, although not the regular crunchy cookies, these ones are soft and chewy. All vegan, of course, easy to digest and without refined products. Healthy yumness.
Fireworks or aromas – coffee, coconut, walnut, cacao nibs, banana and caramelly muscovado ♥ All combining perfectly in a divine easy-to-make cookies.
Ingredients:
for 20 big cookies
2 cups whole wheat flour
1 cup coconut flakes
1/2 cup rolled oats
1 tbs vanilla extract
1 tbs baking powder
2 cups muscovado sugar
1 pureed banana
150 ml espresso
1/2 cup olive oil
1/2 cup chopped walnuts
2 handfuls of goji berries
2 handful of sesame seeds
1 handful fo cacao nibs
coconut flakes for sprinkling
Mix all dry ingredients in a bowl and add the banana, olive oil and espresso one by one. Stir well and then add the walnuts, cacao nibs, seeds and berries. Mix well until the sugar is equally distributed and the texture has a delicious golden brown colour. What a beauty!
Bake this goodness by making small balls and pressing them into thin cookies (remember they are going to double in height). Sprinkle with coconut flakes and place them on baking paper. Put in a preheat oven (180ºC) for 20 minutes. The more you bake, the crunchier they get.
Oh, banana-walnut-cacao infused flavour! These are gonna be repeatedly baked…
